Perfect Health By Deepak Chopra This might be the first book to read.
Deepak Chopra has a way with words, helping to bridge that east-west mind
gap. He keeps it really clear and organized, and backs it with western
science evidence.

Prakriti by Robert E. Svoboda an intro. book getting more esoteric and
poetic than Chopras' Perfect Health. A cherished favorite among practioners.

Complete Illustrated Guide to Ayurveda by Gopi Warrier and
Deepika Gunawant.
A nice beginners book with many pictures to help
with understanding.

Ayurveda, The Science of Self Healing by Dr. Lad

The Complete Book of Ayurvedic Home Remedies by Dr. Vasant
Lad
User friendly, and has good basics of Ayurveda in it as well. From Acne
to Urinary Incontinence and everything in between.

More Advanced:

The Ayurveda Encyclopedia by Swami Sada Shiva Tirtha The"big
book" of everything Ayurveda, (including Panchakarma) and Yoga.

Textbook of Ayurveda, Volume 1 and 2, Fundamental Principles
by Dr. Vasant Lad
If you really want to become a serious
student/practioner.


Cookbooks:

The Ayurvedic Cookbook by Amadea Morningstar. Tons of good
specific info. on foods and Ayurveda crammed into a small modest looking
book.

Eat Taste Heal by Thomas Yarema, Daniel Rhoda A beautiful, large
book, color photos, 'coffee table' type book with good basic info on Ayurveda
and good recipes.

Ayurveda, A Life of Balance by Maya Tiwari A beginning Ayurveda
book and cookbook rolled into one.
